Tagliolini (italian fresh dough) at truffle - Piemonte
Ingredients (for 8 persons): 600 gr Tagliolini to the egg, 80 gr Butter, 80 gr Cheese Parmesan, 1 Small White Truffle, salt Preparation: Let the tagliolini cooking in abundant water with salt, stirring them well with the forck in order to increase the nests. In the meantime cut the butter and leaves to soften a little. Abraded with cure the truffle, brush it and, if some were detached piece, stirs it with the butter. Drained the tagliolini and, without to make them to much dry. Dress them with the grated parmesan cheese, putting some little to the time and stirring them man hand. Joined therefore the butter, stirring to along in order to amalgamate all. Served immediately sprinkling with the slice of truffle.
